Tuscan Bread Salad
Ingredients
- About 1 Pint Cherry Tomatoes
- 1/4 Cup Minced Red Onions
- 1/2 Cucumber, Diced Small
- 1/2 Cup Fresh Mozzarella, Small Cubes
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 Minced Garlic Clove
- 1 Tsp Dijon Mustard
- 1/4 Cup Balsamic Vinegar
- 1 Cup Extra Virgin Olive Oil
- Stale Bread
- Fresh Basil
Method-
In a large bowl, combine the tomatoes, onion, cucumber and mozz. Set aside at room temp
In a separate bowl, whisk together the garlic, mustard and vinegar. Slowly pour in the oil while whisking vigorously until well combined. Set aside
I used a piece of french bread and cut it into 1″ cubes. Bread should be hard and firm but not crouton stage!
Combine all ingredients with the dressing and drain well. The bread will absorb the dressing. Allow to sit for 20-30 minutes, add some fresh chopped basil and serve!
