Summer Peach Salad
Ingredients
- 1 Cup Balsamic Vinegar
- 1 Tbsp Honey
- 3 Ripe Peaches, Pit Removed and Sliced
- About 2-3 Cups Baby Spinach or Arugula
- 1 Cup Blueberries, Washed
- 1 Seedless Cucumber, Diced
- 1 Cup Pecans, Toasted
- 1/2 Cup Crumbled Feta Cheese
Method-
Simmer the vinegar in a small sauce pot until reduced in volume by half. Add the honey and stir to combine. Bring to a simmer again and cook for 5 minutes, remove from the heat.
Assemble all the ingredients in a large bowl except for the vinegar reduction. Toss evenly and plate each salad. Sprinkle with the vinegar reduction and serve immediately.
