Stuffed Pepper Casserole

Ingredients

  • 1 Large Yellow Onion, Diced Small
  • 3 Cloves of Garlic, Minced
  • 3-4 Large Peppers
  • 2 Tbsp Butter
  • 1 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1/2 Tbsp Italian Seasoning
  • 1 Pound Ground Beef
  • 1 Pound Ground Italian Sausage
  • 2 14.5 oz cans Diced Tomato
  • 1 Cup Cooked White Rice
  • 1 6oz Can Tomato Paste
  • 1 Tbsp Worcestershire Sauce
  • 2 10.75oz Cans Condensed Tomato Soup
  • 2 Cups Shredded Cheese

Method-

Heat a large pot or skillet and add melt the butter. Sautee the onion, peppers and garlic together and stir often. After about 5 minutes, add in the meat. Break apart the meat as you are cooking and continue to stir. Drain the fat once the meat is fully cooked, about 10 minutes. Add seasonings, diced tomatoes, rice, paste and Worcestershire. Bring to a simmer and cook for 5 minutes.

Spread the mixture into a 9×13 baking pan. Combine the tomato soup with about a quarter can of water and pour over the mixture. Top with cheese and bake at 350 degrees for 30 minutes. Casserole should be bubbly.
