Sheet Pan Gnocchi with Cherry Tomatoes

Ingredients

  • 2 12 oz Packages of Refrigerated Gnocchi
  • 12 oz Andouille or Chorizo Sausage, Cut into 1″ Pieces
  • 1 Pint Cherry Tomatoes
  • 1 Bunch Asparagus, Trimmed and Cut into 1″ Pieces
  • 1/2 Tsp Salt
  • 1/2 Tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1/4 Cup Olive Oil
  • 2 Cups Fresh Baby Spinach
  • 1/4 Cup Grated Parmesan

Method-

In a large bowl, combine the gnocchi, sausage, tomatoes, asparagus, spices and oil. Spray a sheet pan and spread out the mixture evenly.

Bake at 375 degrees for 20 minutes. Stir in the spinach and cheese and pop back in the oven for 5 minutes.

Serve and enjoy!
