Sheet Pan Gnocchi with Cherry Tomatoes
Ingredients
- 2 12 oz Packages of Refrigerated Gnocchi
- 12 oz Andouille or Chorizo Sausage, Cut into 1″ Pieces
- 1 Pint Cherry Tomatoes
- 1 Bunch Asparagus, Trimmed and Cut into 1″ Pieces
- 1/2 Tsp Salt
- 1/2 Tsp Garlic Powder
- 1/4 tsp Black Pepper
- 1/4 Cup Olive Oil
- 2 Cups Fresh Baby Spinach
- 1/4 Cup Grated Parmesan
Method-
In a large bowl, combine the gnocchi, sausage, tomatoes, asparagus, spices and oil. Spray a sheet pan and spread out the mixture evenly.
Bake at 375 degrees for 20 minutes. Stir in the spinach and cheese and pop back in the oven for 5 minutes.
Serve and enjoy!
