Raspberry Sriracha Taquitos
Ingredients
- 1 1/2 Pounds Chicken Breast
- 1 Tsp Salt
- 1 Tsp Cumin
- 1/4 Tsp Black Pepper
- 1/2 Tsp Chili Powder
- 1 8oz Brick of Cream Cheese
- 1 Cup Shredded White Cheddar
- 1 Cup Shredded Monterey Jack Cheese
- About 1 1/2 Cups Frozen Raspberries
- About 1/2 Cup Sriracha
- 1/4 Tsp Cayenne Pepper
- 1/4 Tsp Chipotle Powder
- 20 Small Flour Tortillas
- Olive oil
- Coarse Salt
Method-
Boil the chicken with the first listed ingredients until tender and shred. Combine the chicken with the cream cheese, shredded cheeses, raspberries, sriracha and cayenne and chipotle. Once well mixed, place about one and a half tablespoons of mixture into each tortilla and roll.
Place into a sprayed baking pan tightly together. Brush with olive oil and sprinkle with salt.
Bake at 350 Degrees for 15-20 minutes until crispy. Serve and enjoy!
