Jalapeno Popper Salad
Ingredients
- 1 Pound Bacon
- 1 Pound Pasta- Elbow, Cavatappi, Cellantani, Etc
- 3-4 Jalapeno Peppers, Seeds Removed and Diced
- 1 Cup Mayo
- 1 Cup Fresh Chopped Spinach
- 8oz Sharp Cheddar Cheese, Shredded
- 1 Pint Cherry Tomatoes, Halved
- 1 tsp Salt
- 1/4 Tsp Black Pepper
- 1 Package Hot Sauce Goldfish Crackers
- 4 tbsp Butter
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
Method-
Chop the bacon and cook until crispy. Remove the bacon from the pan, but leave the drippings. Sautee the jalapenos in the bacon grease for about 5 minutes or until just tender, drain the peppers and set aside. Discard the bacon grease. Bring a pot of water to a boil and cook the pasta for about 10 minutes. Drain and rinse well.
Combine the pasta with the bacon, mayo, spinach, cheese and tomatoes. Add in salt and pepper and refrigerate.
Melt the butter in a pan and crush up the crackers. Toss in the melted butter and stir often over medium heat, adding garlic and onion powder. Once all the butter is absorbed, remove from the heat and allow to cool.
When ready to serve, top pasta salad with the crackers and serve immediately!
