Ham Carbonara Casserole
Ingredients
- 1 Medium Yellow Onion, Diced
- 4-6 garlic Cloves, Minced
- 4 Tbsp Unsalted Butter
- About 2 Cups Diced Ham
- 1 Pound Pasta
- 3 Egg Yolks
- 1 Cup Heavy Cream
- 1 14oz can Condensed Cream of Mushroom Soup
- 1 Cup Frozen Peas
- 2 Cups Shredded Mozzarella
- 1/4 Cup Grated Parmesan
- Salt and Pepper
Method-
Heat the water for the pasta to cook in. Add salt
In a large pot, melt the butter and cook the onions and garlic over medium heat for about 5 minutes, stirring often. Add the ham and remove from the heat. Mix together the egg yolks, soup and heavy cream and slowly whisk it in the ham mixture. Season with salt and pepper and add the peas. Set aside
Cook the pasta 1-2 minutes less than the instructions. Save about 1 cup of the pasta water and drain the pasta. Add the pasta to the ham sauce and add more pasta water if needed.
Place half of the pasta in a sprayed 9×13 pan. Sprinkle with half of the mozz and then layer on the rest of the pasta. Top with remaining mozz and parmesan
Bake at 350 degrees for 15 minutes and then serve!
