Brownie Ice Cream Sandwiches

Ingredients

  • 1 Cup Unsalted Butter, Melted and Cooled
  • 2 Cups Sugar
  • 4 Large Eggs
  • 1 Tbsp Vanilla
  • 1 Cup Flour
  • 1/2 Cup Cocoa Powder
  • 1/2 Tsp Salt
  • 1 Cup Semi Sweet Choc Chips
  • 1/2 Pint of Your Favorite Ice Cream!

Method-

Mix the butter and sugar together in a large bowl until fully combines. Check to make sure that the mixture is not hot and whisk in the eggs and vanilla.

Sift in the flour, cocoa and salt to the butter and egg mixture. Do not over mix. Fold in the chocolate chips. Line a sheet pan with parchment paper and spray with pan release. Pour batter into the pan and spread evenly.

Bake at 375 degrees for 15-20 minutes. Cool completely and then remove the brownies from the pan. Cut with a circle cookie cutter and freeze.

Remove the ice cream from the carton and slice into slabs. Cut the slabs into circles and make sandwiches with the brownie circles. Freeze again for 1/2 an hour before serving. May have to let them out of the freezer a couple minutes before enjoying!
