Zucchini Lasagna Rolls

Ingredients

  • 4-5 Fresh Zucchini
  • About 1 1/2 Cups Marinara Sauce
  • About 1 1/2 Cups Shredded Mozzarella
  • Fresh Basil
  • Parmesan

Method-

Trim the tops and bottoms off of the zucchini and thinly slice lengthwise. I used a Mandolin to make things a bit easier!

Lay out the zucchini and spread some marinara sauce on each slice and top with mozz and basil.

Roll up the zucchini gently and secure with a skewer to help keep the shape.

Place enough marinara sauce to cover the bottom of a 9×9 baking pan and arrange the rolls. Top with any remaining marinara sauce and Parmesan. Bake at 375 degrees for 20-25 minutes.

Serve and enjoy!
