Mini Spanokopita Cups
Ingredients
- 1 12oz Package Frozen Chopped Spinach, thawed
- 2 15ct packages mini Phylo Cups
- 4oz Cream Cheese, Softened
- 1/4 Cup Minced Onion
- 4-5 Cloves of Garlic, Minced
- 6 oz Feta Cheese Crumbled
- 1/2 Tsp Salt
- 1/4 Tsp Black Pepper
- 1/4 Tsp Ground Nutmeg
- 1 Egg
Method-
Press all the water out of the spinach and place on a paper towel.
In the bowl of a stand mixer, combine the cream cheese, mozz, garlic, onion and seasonings. Add in spinach, feta and egg until just combined.
Place phylo cups on a baking sheet and fill each one with the mixture. Bake at 400 degrees for 20 minutes and allow to cool slightly.
Serve and enjoy!
