Mini Spanokopita Cups

Ingredients

  • 1 12oz Package Frozen Chopped Spinach, thawed
  • 2 15ct packages mini Phylo Cups
  • 4oz Cream Cheese, Softened
  • 1/4 Cup Minced Onion
  • 4-5 Cloves of Garlic, Minced
  • 6 oz Feta Cheese Crumbled
  • 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1/4 Tsp Ground Nutmeg
  • 1 Egg

Method-

Press all the water out of the spinach and place on a paper towel.

In the bowl of a stand mixer, combine the cream cheese, mozz, garlic, onion and seasonings. Add in spinach, feta and egg until just combined.

Place phylo cups on a baking sheet and fill each one with the mixture. Bake at 400 degrees for 20 minutes and allow to cool slightly.
