Marinated Pickle Cheese

Ingredients

  • About 1 Pound Dill Havarti Cheese
  • About 1 Pound Sharp Cheddar Cheese
  • 12oz Cream Cheese, Softened
  • About 1 Cup Diced Spicy Bread and Butter Pickles
  • About 2 Tbsp Chopped Dill
  • 3 Scallions, Chopped
  • 1 Tbsp Ranch Seasoning
  • Pinch Red Chili Flakes
  • 1 Tbsp Cider Vinegar
  • 1 Tbsp Pickle Brine
  • 1/4 Cup Olive Oil
  • Salt and Pepper to Taste
  • Small Crackers

Method-

Cut the cheese into small squares. Whip the cream cheese in a stand mixer or with a hand mixer until smooth.

Sandwich together the cheese slices with the cream cheese and arrange them in a serving bowl.

Mix together the rest of the ingredients and pour over the cheese. Wrap and refrigerate for 4-24 hours. Serve with crackers and enjoy!
