Creamy Sausage and Gnocchi

Ingredients

  • 1 Cup, Diced Yellow Onion
  • 2 Tbsp Butter
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 Tsp Garlic Powder
  • 1 Pound Kielbasa or Smoked Sausage
  • 1 Pound Potato Gnocchi
  • 1 Cup Chicken Broth
  • 1 Cup Heavy Cream
  • 2 Cups Fresh Spinach
  • 1/2 Cup Shredded Parmesan

Method-

Melt the butter in a large skillet and sautee the onions. Season with salt, pepper and garlic. Cut the sausage into bite sized pieces and add it to the pan once the onions begin to soften. After about 5 minutes, add in the gnocchi and stir. Add in chicken stock and heavy cream. Bring to a simmer and allow to thicken for about 5 more minutes. Remove from the heat and stir in the cheese and spinach. Allow to sit for a couple minutes and serve!
