Cobb Pasta Salad

Ingredients

  • 1 Pound Farfalle Pasta
  • 2 Cups Shredded Romaine
  • 1 Cup Mayonaise
  • 2 Tbsp Red Vinegar
  • 1 Tsp Lemon Juice
  • 1 Tbsp Honey
  • 1 Tsp Black Pepper
  • 1/2 Tsp Salt
  • 1/4 Cup Minced Chives
  • 1 Small Red Onion, Minced
  • 2 Cups Chopped Cooked Chicken
  • 1/2 Pound Bacon, Chopped and Crooked Crispy
  • 2 Hard Boiled Eggs, Chopped
  • 1 Cup Blue Cheese, Crumbled
  • 1 Avocado, Diced

Method-

In a large bowl, whisk together the mayo, vinegar, honey, lemon juice, chives and onions. Season with salt and pepper.

Cook the pasta al dente and drain and cool.

Add the pasta to the dressing with the rest of the ingredients. Refrigerate for 2 hours and then serve and enjoy!
