Chicken Ranch Jalapeño Popper Puffs

Ingredients

  • 1 Package Puff Pastry Sheets, Thawed
  • 1 8oz block of cream cheese, softened
  • 1 cup cooked shredded chicken
  • 1 1/2 Cups Shredded Cheddar Cheese
  • 2-3 Jalapenos
  • 1 Packet of Ranch Seasoning
  • 1/2 Cup Ranch Dressing
  • 1 egg
  • 1/2 Cup additional shredded cheddar

Method-

Roast and remove the skin of the peppers. Dice the peppers- if you remove the seeds, you remove the heat!

In a stand mixer with the paddle attachment, mix the cream cheese on medium speed until smooth. Add in chicken, first listed cheddar, ranch and peppers until combined.

Roll out the puff pastry and cut each sheet into 4 squares. Place about 1/3 of a cup of the filling in each square and bring two opposite corners together. Mix up the egg and brush over the top of each puff. Top with remaining cheese and bake at 375 for about 20-30 minutes.
