Chipotle Caribbean Glazed Ham

Ingredients

  • 1 Bone in Ham, Spiral Cut
  • 2 Tsp Black Pepper
  • 1 Tbsp Cayenne Pepper
  • 1 Tsp Allspice
  • 1 Tbsp Onion Powder
  • 1 Tsp Salt
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Garlic Powder
  • 1 Tsp Smoked Paprika
  • 1/2 Tsp Cinnamon

For the Glaze

  • 1/2 Cup Maple Syrup
  • 1 Cup Brown Sugar
  • 1 Cup Pineapple Juice
  • 1 Tbsp Chipotle Pepper Powder
  • 2-3 Chipotle Peppers in Adobo, Minced
  • About 2 Cups Fresh Diced Pineapple

Method-

Unwrap the ham and place in a roasting pan. Combine all the seasonings and rub generously over the entire ham. Bake at 350 Degrees for 1 1/2 Hours.

While the ham is baking, make the glaze. Heat the syrup, brown sugar and pineapple juice in a sauce pan and bring to a simmer. Add in the chipotle powder and peppers and simmer for 10 minutes.

Remove the ham from the oven and pour the glaze over top. Add the pineapples to the pan and increase the heat to 425. Bake for additional 20-25 minutes. Rest for 10 minutes before serving!
