Ingredients

  • 2 Packages of Puff Pastry Sheets
  • 4 Tbsp Butter
  • 4 Tbsp Flour
  • 4 Cups Whole Milk
  • 8 oz Swiss Cheese, Shredded and Divided
  • 1 5.3oz Package Boursin Cheese
  • 4 Cups Diced Ham
  • 4 Cups Fresh Baby Spinach
  • Salt and Pepper to Taste
  • 1 Egg, Beaten

Method-

Thaw the puff pastry sheets at room temperature and unfold. Cut each sheet into 4s and lay them out on a parchment lined sheet tray with room to spread. I had to use two trays.

In a large sauce pan, melt the butter and whisk in the flour. Cook for one minute and pour in the milk. Bring to a simmer, stirring often and reduce the heat to low. Add half the swiss cheese and whisk to melt and combine. Add the Boursin Cheese and whisk to melt and combine. Add spinach and ham and once the spinach has softened, remove from the heat and allow to cool.

In the center of each pastry square, place a heaping spoonful of the mixture. Sprinkle with swiss cheese, and bring the four corners of the pastry together in the center. Brush with egg wash and bake at 400 degrees for 20-25 minutes.
