Bacon & Cheddar Stuffed Chicken
Ingredients
- 1 Pound of Bacon, Diced Small
- 1 Yellow Onion, Diced Small
- 2 Sticks of Butter, Divided
- 1/2 Tsp Salt
- 1/4 Tsp Black Pepper
- 1/4 Tsp Garlic Powder
- 1/2 Tbsp Ranch Seasoning
- 2 Cups Fresh Bread Crumbs
- 2 Cups Shredded Cheddar Cheese
- 4 Scallions, Cut small
- About 1 1/2 Pounds Boneless Skinless Chicken breast
- 1/4 Cup Flour
- 1 Cup Milk
- Salt and Pepper to Taste
Method-
Cook the bacon in a large skillet until crispy. Drain the fat and cook the onions in the same pan with 1/2 of the butter and seasonings. Cook the onions until translucent and golden brown. Combine the bread crumbs with the bacon, onions and butter, cheddar, and scallions.
Butterfly the chicken and stuff with the stuffing. Season with salt and pepper and bake at 350 degrees for about 40 minutes or until fully cooked.
While the chicken is cooking, melt the butter in a small pan and whisk in the flour. Simmer for 5 minutes, stirring often. Whisk in the milk and bring to a simmer. Once thickened, add in the remainder of the cheese and melt. Pour the sauce over the chicken, adding a little milk to thin it out if needed.
