Street Corn Coleslaw
Ingredients
- 4 Fresh Corn on the Cob
- 2 Tbsp Butter
- 1 Tsp Salt
- 1 Small Head of Green Cabbage, Finely Shredded
- 1/4 Head Red Cabbage, Finely Shredded
- 1 Jalapeno Pepper, Seeded and Diced
- 1 Cup Sour Cream
- 1 1/2 Cups Mayo
- 1/4 Cup Honey
- Zest of one lime
- Juice From one Lime
- 2 Tbsp Cider Vinegar
- 1 Tsp Salt
- 1 Tsp Smoked Paprika
- 1 Tbsp Chili Powder
- 1 Tbsp Chopped Cilantro
Method-
Boil the corn with the first listed salt and butter for about 15 minutes. Drain well and cool. Grill or roast the corn to give it some char if you want!
Remove the corn from the cob and mix with the cabbage and pepper. Mix together the sour cream, mayo, honey, lime zest and juice, vinegar and spices. Mix all together and serve immediately with the cilantro
