Traditional Irish Scones

Ingredients

  •  3 1/2 Cups All Purpose Flour
  • 1 tsp Salt
  • 1/4 Cup Sugar
  • 5 tsp Baking Powder
  • 1/2 Cup Butter, Cold
  • 1 Large Egg
  • 2/3 Cup Whole Milk (plus some extra for the tops)
  • 1/3 Cup Heavy Cream
  • Jam or butter for topping

Method-

Preheat the oven for 350 degrees and line a baking sheet with parchment paper

In a large bowl, combine the flour, salt and baking powder. Using a box grater, grate the butter and mix it into the flour mixture by hand. In a separate bowl, whisk together the egg with the heavy cream and milk. Mix into the flour mixture by hand until the dough comes together. Put dough on a floured work surface and knead together until smooth, being careful not to overwork the dough. Press flat and cut with a circle cutter. Place scones onto the baking sheet and brush with milk. Bake for about 20 minutes, until very lightly golden brown. Allow to cool and serve. Can be stored for two days in a freezer bag at room temp, but best served immediately! Makes about 12 scones
