Southwest Black Bean Sheet Pan Fajitas

  • 4 Large Peppers, Seeded and Sliced Thin
  • 2 Jalapenos, Seeded and Sliced Thin
  • 2 Yellow Onions, Sliced Thin
  • 1 Tbsp Olive Oil
  • 1 Tsp Chili Powder
  • 1/2 Tsp Cumin
  • 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1/4 Tsp Garlic Powder
  • 1/4 Tsp Dried Oregano
  • 2 Limes
  • 2 14 oz Cans Black Beans, Drained and Rinsed
  • 2 Tbsp Fresh Chopped Cilantro
  • Tortillas and Toppings


In a large bowl, toss together the pepper and onion slices with the olive oil, spices and juice from one of the limes. Spray a large sheet pan and arrange the veggies evenly. Bake at 400 Degrees for about 25 minutes, peppers and onions should be tender. Toss the veggies and add in the black beans. Return to the oven and bake for another 10 minutes.

Remove the pan from the oven and squeeze the other lime over the pan and sprinkle with cilantro.
