Zucchini Fritters

  • 2 Cups Shredded Zucchini
  • 3 Egg Yolks + 1 Egg
  • 1 Tbsp Minced Garlic
  • 3/4 Cup Panko Bread Crumbs
  • 1/3 Cup Shredded Mozzarella
  • 1/2 Cub Shredded Parmesan
  • 1/4 Tsp Fresh Cracked Pepper
  • 1 Tsp Season Salt
  • Butter


Squeeze out as much liquid as possible from the zucchini and combine all the ingredients besides the butter. Melt enough butter to cover the bottom of a large skillet and make around 10 Patties from the zucchini mixture. Working in batches, brown both sides of each patty over medium high heat in the butter, flipping often and pressing down the Pattie’s to ensure even cooking. Add more butter as you continue to cook.
