4 10″ Flour Tortillas
1 Medium Yellow Onion diced
1 Red Pepper Diced
1 Anaheim Pepper Minced (if desired)
1 Cup Chopped Mushrooms
OR YOUR FAVORITE VEGGIES!!!
2 Tbsp Oil divided
1 Tbsp Taco Seasoning
About 2 Cups of Shredded Cheddar Cheese
Salsa and Sour Cream if Desired
In a sautee pan, heat 1 Tbsp of oil. Sautee veggies until just tender. Add seasonings and stir to combine. Remove from heat and reserve.
In a separate sautee pan, or an electric skillet, heat 1 Tbsp of oil. Place tortilla in pan and top with cheese, covering all the way to the edge! Add veggie filling to half of the tortilla.
Once the cheese is melted, fold the tortilla in half and lightly brown on both sides. Remove from pan and cut into wedges. Serve with salsa and sour cream if you’d like!
