Nick's Picks: Thanksgiving Wellington

Ingredients:
2 sheets puff pastry
About 1 1/2 pounds leftover turkey
2 cups leftover stuffing
2 cups leftover mashed potatoes
1 cup green beans
1 egg, beaten
Kosher salt
Leftover gravy

Method:
Thaw out the pastry sheets and cut them into 6 equal squares using a pizzas cutter.
Arrange the turkey, stuffing, potatoes and green beans in the center of each square. You can really use any leftovers you have but this is a good start.
Fold the corners of the squares over each other and pinch together any openings. Place on a sheet pan lined with parchment with the pinched ends on the bottom. Brush the tops with the eggs and sprinkle with salt.
Bake at 375 degrees for 25-35 mins.
Once golden brown, remove and serve with some hot gravy!
