Quick and Easy!
1 Cup of Sliced Fresh Mushroom
8 Cups Fresh Whole Baby Spinach
1 Tbsp Butter
1 Cup of Cream or Milk
Salt and Pepper to taste
Melt the butter in a large skillet and add the mushrooms. Sautee until slightly tender (about 3-5 minutes)
Add spinach to the pan and sautee for about a minute. Just enough to get it to start cooking!
In a large bowl, scramble the eggs very well and add the cream. Season to taste.
Spray a 9x13in pan and pour the egg mix in. Top the eggs with the spinach and mushrooms. Spread out the veggies as well as you can so its kind of even.
Bake at 325 degrees for about 30 minutes or until all of the eggs are cooked!
