Spicy Chorizo Hash Brown Cups

Ingredients:

15 oz Frozen Shredded Potatoes
1 Stick of Butter, Melted
Salt and Pepper to taste
1 Pound Chorizo Sausage Links
24 Eggs
2 Cups Shredded Pepper Jack Cheese

Method:

Spray 24 muffin cups with pan spray. In a bowl, combine the potatoes, butter and seasonings. Press into the bottom of the muffin cups and bake at 375 for 10-15 minutes. Remove the pans from the oven. Slice the sausage into 24 pieces and place one in each muffin cup. Either scramble the eggs, or crack each one and place them in the muffin pans. Top with cheese. Bake again at 375 for 10-15 mins until the eggs are set. Allow to cool in the pan for about 5 minutes and remove from the pan.
