2 Cups Flour, sifted
3/4 Cup Packed Brown Sugar
3/4 Tsp Baking Soda
1/4 Tsp Salt
1/2 Cup Quick Oats
1/2 Cup Butter, melted
2 Large Eggs
1 Tbsp Vanilla
1 Cup Buttermilk
4 Large, Very Ripe Bananas, Mashed
1 Cup Nuts (I Used toasted slivered almonds and pecans)
1/2 Cup Dried Cherries
1/3 Cup Chunky Peanut Butter
1/4 Cup Honey
Combine flour, brown sugar, baking soda and oats in a large bowl. Set aside.
In a separate bowl combine eggs, buttermilk, and bananas.
Add the two together and whisk until batter is formed. Add in the nuts, fruit, peanut butter and honey. Pour into a large sprayed loaf pan. Bake at 350 for 45 minutes. Or until an inserted toothpick comes out clean!
Remove from the oven and allow to cool on a wire rack. After cool to the touch, remove from pan and cool completely before slicing and serving!
