Chicken Kiev

Ingredients:

4 chicken breasts
8 ½ inch thick pieces of Colby jack cheese*
2 sticks of butter
2 ½ c. bread crumbs*
2 t. Italian seasoning*, divided
2 t. garlic salt, divided
1/3 c. Parmesan cheese
2 dashes of pepper

Method:

Place each trimmed chicken breast between 2 pieces of plastic wrap and pound out to ½ inch thickness. Slice in half and set aside.
In a small bowl mix 1 t. each Italian seasoning and garlic salt into one stick of room temperature butter with a dash of pepper. Set aside.
In a small bowl melt other stick of butter.
In a medium bowl mix other teaspoon of Italian seasoning and garlic salt into bread crumbs with Parmesan cheese and other dash of pepper.
Set up assembly line of chicken, seasoned butter, cheese, melted butter, bread crumbs, and parchment-lined baking sheet.
Put 1T. seasoned butter on one end of chicken breast. Place a piece of cheese on top of butter. Roll up the chicken, tucking any edges into the roll, covering up cheese completely. Dip the roll into the melted butter, then roll in the bread crumbs, covering completely, and place on the parchment-lined baking sheet.
Cover and refrigerate overnight.
Preheat the oven to 400. Remove the covering from chicken and bake for 30 minutes. Some cheesy goodness will ooze out. Scoop that up to serve with the chicken.

*Substitutions can be made to customize this for your family: any cheese will work, freshly chopped herbs are great, and you can use gluten-free bread crumbs or almond flour to meet dietary concerns.
