Light your grill only on one half. Heat on high. Core the tomatoes, for best results use beefsteak tomatoes. Rub tomatoes with olive oil and sprinkle with salt and pepper. For an extra twist, stuff tomatoes with roasted garlic or fresh mozzarella and basil. Place tomatoes on unlit side of the grill and close the lid. Cook for 5 minutes and check tomatoes. Cook in 5 minute intervals checking every time. Tomatoes should be soft, but still a little firm. Remove from grill and serve up with your favorites!
