Nicks Picks: Cajun Shrimp Sausage And Veggie Pocket


1 Pound Peeled Raw Shrimp
1 Pound Andoiulle or Smoked Sausage, Sliced
Baby Potatoes
2-3 Zucchini Sliced
Fresh Lemon Juice
1-2 tbsp Cajun Seasoning
1/2 Tsp Cayenne (Optional)



Make 4 squares of heavy duty aluminum foil and spray each one. (12×12)

In a large bowl, combine shrimp, potatoes, sausage, zucchini, lemon juice and seasonings.

Place a handful on each square. Wrap and seal tightly.

Bake at 400 degrees for 30-40 minutes. Potatoes should be tender.

When opening the packet, be careful of the steam inside
