Nick's Picks: Bacon Wrapped Pork Tenderloin

A combination of savory, sweet, smokey and spicy!

Nick's Picks: Bacon Wrapped Pork TenderloinIngredients:

3 Pounds Pork tenderloin or 2 tenderloins
1 Pound Bacon, Thick Cut, Maple Flavored
1 Cup Honey
2-3 Tbsp Horseradish

Method:

Slice the tenderloins into medallions approximately 2 inches thick. (You should get 4-5 medallions out of each tenderloin) Wrap each medallion with a strip of bacon and insert a toothpick to hold the bacon in place.
Heat a sautee pan over high heat. Sear the medallions on the top and bottom so they are dark brown, about 2-3 minutes on each side. Place in a baking pan and bake at 375 for about 20 minutes. Pork should be cooked to 145 degrees or higher. In a bowl, combine the honey and horseradish. Place in individual bowls for dipping.
Remove from oven and let rest for a couple of minutes. Drain any excess fat and remove the toothpicks. Serve and enjoy
