Kick off your big game festivities with this kickin’ chicken chili!
1 Green Pepper Diced
1 Onion Diced
2 Pounds Chicken breast Cubed
2 Plum Tomatoes Diced
1 28oz Can Whole Peeled Tomatoes
1 28oz Can Crushed Tomatoes
1 Tsp Mesquite Seasoning
3 Oz Chipotle Peppers Chopped
29 oz Can Black Beans Drained and Rinsed
16 oz bag Frozen Corn
1 Tsp Salt
In a large pot over medium heat, cook peppers onions and chicken with a little oil for about 10 minutes stirring often. Season with salt to taste. Add tomatoes chipotle peppers and mesquite.
Bring to a simmer and cook for 20 minutes. Add beans, corn and salt. Cook for another 10 minutes on low.
