Hawaiian Pineapple Fried Rice

Ingredients

  •  2 Cups Long Grain Rice, Uncooked
  • 2 Tbsp Cooking Oil
  • 3 Garlic Cloves, Minced
  • 2 Tbsp Fresh Grated Ginger
  • 1/2 Cup Diced Raw Carrots
  • 1/2 Cup Diced Onions
  • 3 Scallions, Chopped
  • 3 Eggs
  • 1/2 Green Pepper, Diced
  • 1/2 Red Pepper, Diced
  • 1 Cup Frozen Peas
  • 2 Cups Diced Ham
  • 1/2 Pineapple, Diced
  • 1 Tbsp Toasted Sesame Oil
  • 2 Tbsp Oyster Sauce
  • 1/4 Soy Sacuce
  • Sesame Seeds

Method-

Cook the rice in a medium sauce pot in about 4 cups of water with the lid on. Set aside once all the liquid has been absorbed

Heat a large skillet over high heat. Heat the oil and sautee the garlic, ginger, carrots, the white parts of the scallions and onions together for about 5 minutes. Whisk the eggs until scrambled and add them in stirring constantly until eggs are fully cooked. Add in peppers, peas and ham and continue to sautee for about 5 more minutes.

Add in the rice, pineapple, sesame oil and soy and oyster sauces. Stir well. Top with sesame seeds and the green parts of the scallions and serve!
