Gyro Bowls

  • 1 to 1 1/2 Pounds Meatloaf Mix, Ground Beef, Ground Lamb or any Combination
  • 3 Cloves of Garlic, Minced
  • 1 Large Egg
  • 1 Tsp Sea Salt
  • 1 Tsp Oregeno
  • 1/2 Tsp Black Pepper
  • Zest of one Lemon, Minced
  • 1/2 Cup Finely Chopped Feta Cheese

Lemon Rice

  • 4 Cups Cooked Rice
  • 1 Tbsp Sea Salt
  • Juice of one Lemon

Tzatziki Sauce

  • 1/2 Seedless Cucumber, Shredded
  • Sea Salt
  • 1 Cup Plain Greek Yogurt
  • 1 Tbsp Fresh Dill, Minced
  • 1 Tbsp Fresh Mint, Minced

Cucumber and Tomato Salad

  • 1/2 Seedless Cucumber, Diced Small
  • About a cup of diced Roma Tomatoes
  • 2 Tbsp Olive Oil
  • 1 Tsp Sea Salt
  • 1/2 Tsp Black Pepper



Combine the meatball ingredients and form into very small meatballs. Place on a foil lined, sprayed cookie sheet and bake at 425 degrees for 15 minutes. Drain any fat.

Sprinkle salt over the shredded cucumber and place in a strainer to remove excess water. After about 10 minutes, press any liquid out you can. Mix the cucumber together with the yogurt and herbs.

Assemble the cucumber and tomato salad by combining all ingredients

Mix together the rice, lemon juice and salt while the rice is still hot from cooking.

Place rice in bowls and top with meatballs, tzatziki, tomato and cucumber salad and what ever other toppings you like -Hummus, Pita, Kalamata olives
