Chorizo Sausage Hash Casserole

  • About 2 Pounds Red or Gold Potatoes
  • 1 Pound Chorizo Sausage, cut into chunks or slices
  • 3-5 Garlic Cloves, Minced
  • 1 Cup Diced Green Pepper
  • 1/2 Cup Diced Yellow Onion
  • 2 Tbsp Butter
  • 1/2 Cup Shredded Cheddar Cheese
  • Salt and Pepper
  • 1 Tsp Smoked Paprika
  • 6 Eggs


Wash and cut the potaotes into quarters and then about 1/4 in slices. Place in a pot and fill with water and about a tablespoon of salt. Boil for 10 minutes and drain well

In a large skillet, heat a little olive oil and sautee the sausage until fully cooked and a little crispy.

Remove the sausage from the pan, but leave the drippings. Add the butter and sautee the peppers, onions and garlic for 3-5 minutes or until tender. Season with salt and pepper. Add in the cooked potatoes and paprika and sautee until potatoes are fully cooked and starting to crisp. Add in sausage and mix up.

Spray a 9×13 pan and place the hash inside. Set an oven for 350 degrees.

Cook the eggs, sunny side up and place over top the hash. Top with cheese and place in the oven for 10 minutes.
