Cheddar Zucchini Bread

Ingredients

  • 3 Cups All Purpose Flour
  • 1 Tbsp Baking Powder
  • 1 Tsp Sea Salt
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 3/4 Cup Shredded Zucchini
  • 1 Cup Shredded Sharp Cheddar (plus a little extra for later)
  • 3 Tbsp Chopped Fresh Chives
  • 12oz Non Alcoholic Beer
  • 3 Tbsp Unsalted Butter
  • 1 Tbsp Honey

Method-

In a large bowl, combine the flour, baking powder, salt, garlic and onion. Squeeze out as much liquid as possible from the zucchini and add that, the cheddar and the chives to the flour. Pour in the non alcoholic beer and mix until just combined. Butter a loaf pan with 1 tbsp of the butter and spread the bread mixture in. Take another tablespoon of the butter and melt it and pour it over the bread.

Bake at 350 degrees for 50-70 minutes. Insert a toothpick into the center of the loaf to check to see if it comes out clean.

Melt the last of the butter with the honey and brush that over the cooked bread and sprinkle with cheese. Bake for another 5 minutes and allow to cool on a wire rack. After about 1/2 an hour, run a sharp knife around the pan and remove the bread from the pan. Slice with a serrated knife or allow to cool entirely before wrapping up for later!
