BBQ Pineapple Chicken Skewers

  • 2 Pounds Boneless Chicken Breasts
  • 1/3 Cup Teriyaki Sauce
  • 1/2 Cup BBQ Sauce
  • 2 Tbsp Fresh Minced Ginger
  • 4 Garlic Cloves, Minced
  • 1 Sweet Onion, Large Diced
  • 1 Green Pepper, Large Diced
  • 1 Red Pepper, Large Diced
  • 1 Pineapple, Peeled, Cored, Large Diced


Cut the chicken in large chunks and marinate it with the teriyaki and bbq sauces, garlic and ginger overnight.

Skewer the chicken, peppers, onions and pineapple.

Grill the kabobs or heat a large skillet with a little olive oil until cooked. Top with remaining marinade and cook until chicken is fully cooked and pineapple is caramelized. Makes between 6-10 skewers

Serve with tortillas and enjoy!
